Hey guys! So I’ve been contemplating buying an Instant Pot for months and today I went and bit the bullet! Since I tried it out today I figured why not start my very first blog post with my very first time trying the IP.
I’m super excited to share with you how easy this is and I can’t wait to try more recipes! I will be updating my food section with things we try, good or bad, and let you know how they worked for our family! My husband and I have two teenage boys and they are not picky eaters by any means!
I already know this is a great recipe because I make it in the crockpot quite frequently but it takes half a day at least. This way I can have a meal on the table in about 20 minutes or less and they can eat better than fast food before sports, church, acting, or wherever todays activities are taking us!
Lets get started….
You will need:
2-3 pounds chicken breasts (fresh or frozen, can use thighs if you prefer)
1 jar of your favorite salsa
1 package or taco seasoning (I use a homemade version, see below)
Chicken stock or water
Any condiments you like on your tacos….shredded cheese, avocados, sour cream, etc (it’s your taco, go crazy)
Homemade Taco Seasoning:
1 TBSP chili powder
1 tsp salt
1 tsp pepper
1 tsp ground cumin
1/2 tsp paprika
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp red pepper flakes
1/4 tsp dried oregano
Add 1/2 cup of water or chicken stock to the bottom of the Instant Pot.
Season both sides of chicken with taco seasoning and place in the pot. Add jar of salsa.
Place the lid on your IP and lock in place. Plug it in, turn it on and listen to the fun music it plays! 🙂
Make sure your pressure release button is turned to sealing.
Select the poultry button if you have it, if not hit Manual or Pressure Cook.
I selected 13 minutes for these 4 fresh chicken breasts, if I were to do frozen or thighs I would have increased the time to about 20 minutes.
When they were done I did a pressure release, shredded the chicken and put it back in the pot to stay warm. If you don’t think it’s cooked enough you can always turn it back on a few more minutes once it’s shredded. I have also read you can let it naturally come down on it’s own as well.
Serve on your favorite tortillas or just eat in a bowl with whatever toppings you choose!
It makes great leftovers too!
